This loin comes from a 26 month old Mangalitza pig, born and rasied on the farm. Until recently the reserve of the restaurant we are offering a very limited amount of this item. This pig has lived outside its entire life, fed on a diet of natural forage, pasture and supplemented only fermented organic grains, waste fruit and vegetables. Due to the age, breed and diet, this pork is a very dark red, not dissimilar to beef in appearance and texture. When most pigs in this country live only to 4 or 5 months old, we are excited to give people an opportunity to cook and taste a fully mature animal. We have dry-aged the loin for 3 weeks and can offer the loin as a whole section, ideal for roasting, or broken down into chops. Due to the large amounts of fat on a Mangalitza, we have trimmed the loin of some fat to make it suitable for roasting or grilling.
