We are coming into our poultry season now with chickens and guinea fowl ready to see us through the summer. This first batch of Naked Neck chickens were hatched on 8th February and have lived a great life, roaming freely through our fruit trees and meadow field, fed only on Organic grains and forage. They are a real treat to use in the kitchen, and something we look forward to every year. Please do take the time to make a stock from the leftover bones if you can, as they are quite incredible from organic birds of this age.
These chickens coincide with more a few more of our beautiful Dexter steers taken to abattoir on Monday 16th June. The majority of these will be used in the restaurant but we'll be making sausages from some of the legs and taking the dry aged flanks and chucks to make some hand pressed steak burgers.
