June’s offering will be lamb based again from our farm-share with Graham Dawe, with whom we co-own the herd of Dexters. These organic Romney sheep, just as with the cows, live life as nature intended. Outside 365, moving between his farm and ours throughout the year, they live solely on a diet of grass and forage. We have a group of 20 ewe lambs, between 10-11 months that look lovely and will be ready for June. We are also processing a group of Tamworth pigs, of which the collars and loins will be set aside to be dry aged for 14 days.
We are processing these lamb with a view to getting the BBQs out for midsummer. We are therefore butterflying the legs, cutting chops and making a herby sausage suited of the grill from some of the lamb bellies.
We have booked the Romneys in for abattoir on 2nd June so they will have 2 weeks of dry ageing before we process them for dispatch. We will be aiming to send this box out fresh, barring any June heatwave!
