When Italian immigrants first moved from Bologna to Bavaria, the mortadella went with them. As is often the case, it underwent a gradual evolution, the indigenous baverian culture imparting its technique and preference, into what is now known as a speckwurst. Made in the same style as a mortadella, a tight and very fine sausage farce is studded with a significant amount of fat before being cold smoked, poached and ultimately air dried until it reaches the desired texture. To be sliced thin and served as per ham. (400g)
