Red Devon Shin from a 7 year old Organic Red Devon Cow
This cow has been dry aging in the butchery here since the end of July and looks to be everything you'd want from traditional rare breed grass fed cattle; rich yellow fat from a long life on grass, and deep waxy rich meat.
We remove the shins first, after an initial fortnight of hanging. These are packed and blast frozen.
Approx 1kg pack of Boneless Shin. Perfect for slow cooking - enough to feed 4 people
