7 year old Organic Red Devon Cow - 60 Day Aged Red Bone-in Rib

A Dry Aged Bone in Red Devon Rib from a mature 7 year old cow. 

This cow has now been dry aging in the butchery here since 22nd July. This mature cow is  everything you'd want from traditional organic rare breed grass fed cattle; rich yellow fat from an incredibly long life on grass, and deep waxy rich meat. 

The sirloins and rumps are being used in the restaurant here but we have reserved the ribs of beef for those wanting a treat at home. 

This Red Devon cow is much bigger than our dexter cattle and therefore the bone in ribs will be large, weighing approximately 1.5kg per rib. This should be enough to feed 4-5 people per rib.
