A Dry Aged Red Devon Featherblade (boneless) from our farmshare with Graham Dawe, with whom we co-own our Dexter herd.
Approx 1.2kg boneless - enough to feed 4-6 people. A great large format Sunday lunch option.
The featherblade or blade of beef is a great joint for slow cooking. It sits on the shoulder blade of the cow, with a nice layer of fat covering it. This allows it to be dry aged on the bone, and we often set these aside to age for main courses at the farm. It has a thick band of tendon through the middle of the joint which, like a shin of beef or cheek, becomes lovely and yielding after slow cooking.
We slow roast them in a cast iron pot with good beef stock, and plenty of heads of garlic & herbs for about 4 hours at 145c.
