Our most recent batch of Hubbard chickens are quite special. Our Hubbard chickens are a slow growing bird perfectly adapted to free ranging in all conditions. This batch, hatched at the beginning of April, have lived a seriously long life on rich pasture and organic grains. The resulting birds are as chickens used to be; huge on flavour with thick skin, a proper layer of fat, and incredibly juicy. The cockerels are the largest of the birds, all weighing in at around 3.5-4kg kg. Cockerels are revered in French kitchens and these have been a joy to cook here in the restaurant over recent weeks. Due to their size, we have removed the drumsticks and halved the birds for the home kitchen, making them oven ready for roasting. Each half bird weighs approximately 1.3kg
