4 year old Dexter Steer - 30 Day Aged Chateaubriand

A Dry Aged in Dexter Chateaubriand from a mature 4 year old steer. 

We have 2 cows dry aging in the butchery here since 14th September. This Dexter beef is  everything you'd want from traditional organic rare breed grass fed cattle; rich yellow fat from a wonderful long life on grass, and deep waxy rich meat. It is a rare thing to have 100% grass fed beef; these cows have never seen a shed in their lives, living outside 365 since birth, enjoying natural forage and good pasture throughout.

We are dry aging this beef for 30 days to ensure the fat retains some sweetness. 

Weighing approximately 500g, this should be enough to feed 2 people.
