We take the briskets from our Dexter cattle, and brine them in a salt beef brine for 3 weeks. The brine is made up of salt, brown sugar, allspice, bay, mace, peppercorns and coriander seeds.
We then give the salted briskets a soak before vacuum sealing ready for dispatch.

These joints will easily feed 6 ppl.
Requires cooking - take the joint out of the vacuum bag, and poach in some water with carrots, onions, celery, peppercorns and bay. Poach for 2.5 hrs at a very gentle simmer and let cool in the stock. This was you'll get a lovely beef broth to use alongside the salt beef itself.
