We make our butter in the traditional Cornish style; with clotted cream. Thick, golden Jersey cow cream from our neighbour Barbara Lake is clotted in large milk pans and then churned before being salted with Cornish Sea Salt, and finally hand shaped with butter paddles.
Barbara Lake is one of a kind; the last traditional clotted cream butter maker in the UK. She farms a small herd of Guernsey cows at her farm just up the road from us. She has made butter all her life, previously supplying Neals Yard Dairy in London with her iconic 'Priors Butter'. Now in her late seventies, she still separates and clots the cream herself, with us now helping her to make the butter.
