We take the briskets from our Dexter cattle, and brine them in a salt beef brine for 3 weeks. The brine is made up of salt, brown sugar, allspice, bay, mace, peppercorns and coriander seeds.
We then give the salted briskets a soak before vacuum sealing ready for dispatch.

Requires cooking - we have vacuum sealed the briskets in vacuum bags which can themselves be used for cooking. So simply pop the vacuum sealed joint into a pot of very gently simmering water and poach 2.5hrs. Then the joint can either be sliced thin and eaten cold or served warm.
Alternatively, taker the joint out of the vacuum bag, and poach in some water with carrots, onions, celery, peppercorns and bay. Poach for 2.5 hrs at a very gentle simmer and let cool in the stock. This was you'll get a lovely beef broth to use alongside the salt beef itself.
