Our air dried duck breasts are made in the style of a 'Magret Seche'. An air dried ham to be enjoyed as you would a salami; simply hand cut and served at room temperature. The breasts of our largest ducks are salted then air dried for a couple of months. The natural sweetness of the duck helps them develop the same mould and flavour profile as a traditional saucisson seche. A great little ham to for the home.
